Instructions
- Prepare Pumpkin Mascarpone Mixture: In a large bowl, combine the mascarpone cheese, canned pumpkin, light brown sugar, and pumpkin spice blend (cinnamon, nutmeg, ginger, allspice, cloves). Mix thoroughly until the ingredients are well combined to create a smooth pumpkin mascarpone mixture.
- Whip Cream: In a separate large bowl, beat the heavy cream, granulated sugar, and vanilla extract until stiff peaks form. Gently fold half of this whipped cream into the pumpkin mascarpone mixture to lighten it. Set the remaining whipped cream aside covered and refrigerated for topping later. This creates a creamy pumpkin mousse.
- Dip Ladyfingers: Mix the strong brewed coffee with the coffee liqueur in a small bowl. Quickly dip each ladyfinger into this coffee mixture, making sure not to soak them too long to avoid sogginess.
- Assemble First Layer: Arrange a single layer of the dipped ladyfingers in the bottom of a 13×9-inch dish. Spread half of the pumpkin mascarpone mousse evenly over the ladyfingers. Smooth the surface gently.
- Assemble Second Layer: Repeat the process with another layer of dipped ladyfingers, then spread the remaining pumpkin mousse over the top. Cover and refrigerate for at least 2 hours or preferably overnight to allow flavors to meld and the dessert to set properly.
- Finish and Serve: Before serving, pipe or dollop the reserved whipped cream evenly over the top of the tiramisu. Sprinkle generously with additional cinnamon and chocolate shavings as desired. Serve at room temperature for the best flavor and texture experience.
