  • Author: Thomas
  • Total Time: 43 minutes
  • Yield: 16 brownies 1x

Description

These Reese’s Stuffed Brownies combine rich, fudgy brownie batter with whole Reese’s peanut butter cups baked inside, topped with a creamy peanut butter frosting and drizzled with melted semi-sweet chocolate. Perfect for peanut butter and chocolate lovers looking for a decadent dessert with a gooey surprise inside.

Ingredients

Scale

Brownie Batter

  • 1 Pillsbury family size brownie mix (19.5 ounces)
  • 1 large egg
  • 4 ounces cream cheese (softened)
  • 1/4 cup salted butter (softened)

Filling

  • 16 full-size Reese’s peanut butter cups (frozen)

Peanut Butter Frosting

  • 1/2 cup salted butter (softened)
  • 1 cup creamy peanut butter
  • 3 tablespoons 2% milk
  • 2 cups powdered sugar

Chocolate Drizzle

  • 2 ounces semi-sweet chocolate

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350ºF. Line an 8×8 inch baking pan with parchment paper or spray it with cooking spray to prevent sticking.
  2. Make Brownie Batter: In a stand mixer bowl or using an electric mixer, combine the brownie mix, egg, softened cream cheese, and 1/4 cup softened salted butter until fully mixed. Scrape the sides with a rubber spatula as needed. The batter will be thick. Spread this mixture evenly in the prepared pan.
  3. Add Reese’s Cups: Take the frozen Reese’s peanut butter cups and press them into the brownie batter in a 4×4 grid pattern (16 total). Press them so their tops are level with the batter surface.
  4. Bake Brownies: Place the pan in the oven and bake for approximately 28 minutes, or until a toothpick inserted near the edge comes out with moist crumbs but no raw batter.
  5. Prepare Peanut Butter Frosting: While the brownies bake, combine 1/2 cup softened salted butter, 1 cup creamy peanut butter, 2 cups powdered sugar, and 3 tablespoons 2% milk in a stand mixer. Beat for 2-3 minutes until the frosting is light and fluffy.
  6. Cool and Frost: Allow the brownies to cool completely in the pan. Once cool, spread the peanut butter frosting evenly over the top.
  7. Melt Chocolate: Place 2 ounces of semi-sweet chocolate in a microwave-safe bowl. Heat in 15-second intervals, stirring between each, until fully melted. Take care to melt slowly to avoid burning.
  8. Drizzle Chocolate: Drizzle the melted chocolate over the peanut butter frosting. Let the brownies set before slicing and serving.

Notes

  • Using frozen Reese’s cups helps them retain shape and prevents them from melting too much into the batter.
  • Ensure brownies are fully cooled before frosting to prevent melting.
  • The frosting can be stored in the refrigerator if not using immediately; bring to room temperature before spreading for easier application.
  • For a richer chocolate flavor, use high-quality semi-sweet chocolate for the drizzle.
  • You can substitute 2% milk with any milk of choice including almond or oat milk for different dietary needs.
