Description

Samoa Rice Krispie Treats are a delightful twist on the classic marshmallow cereal bar, inspired by the flavors of the popular Samoa cookie.   • 6 cups Rice Krispies or alternative crisp rice cereal
  • 4 tablespoons butter
  • 5 cups miniature marshmallows

  • 3 cups semi-sweet chocolate chips
  • 1½ cups coconut flakes
  • ¾ cup caramel sauce (homemade or store-bought)

Instructions

  1. Prepare the marshmallow mixture: Melt butter in a large saucepan over medium heat. Once melted, stir in the miniature marshmallows continuously until completely melted and smooth. Remove from heat to prevent burning.
  2. Combine with cereal: Immediately stir in the Rice Krispies cereal until all of the cereal is well coated with the melted marshmallow mixture. This forms the base of the treats.
  3. Press into pan: Transfer the mixture into a well-greased 9 x 13 inch pan. Use a greased spatula or wax paper to press the mixture down firmly and evenly. Allow to cool completely so it sets properly.
  4. Cut into bars: Once cooled, cut the marshmallow crisp base into 24 even bars.
  5. Melt chocolate: Place the semi-sweet chocolate chips into a deep microwave-safe bowl. Microwave in 10-second bursts, stirring well in between, until the chocolate is fully melted and smooth.
  6. Dip bars in chocolate: Dip the bottom third of each Rice Krispie Treat bar into the melted chocolate. Place them upside down on a parchment-lined tray or plate to let the chocolate set and harden completely.
  7. Prepare caramel coconut topping: In a small bowl, mix together the caramel sauce and coconut flakes until the coconut is evenly coated.
  8. Add topping: Place a small spoonful of the caramel-coconut mixture on top of each treat. Drizzle additional melted chocolate over the top for decoration and flavor.
  9. Let set: Allow all the chocolate to fully set before serving. These treats are best enjoyed fresh, ideally the same day they are made for the best texture and flavor.

Notes

  • Use a well-greased pan or line with parchment paper to easily remove the bars after setting.
  • For a homemade caramel sauce, gently heat sugar, butter, and cream until caramelized, or use store-bought for convenience.
  • To toast coconut flakes for extra flavor, spread them on a baking sheet and toast at 350°F (175°C) for 5-7 minutes, stirring occasionally until golden brown.
  • Store leftover treats in an airtight container at room temperature for up to 2 days; best consumed fresh.
