Chicken Mixture

  • 9 oz ground chicken
  • 1 clove garlic, finely grated
  • ½ tsp ginger, finely grated
  • ½ tsp salt
  • ¼ tsp sugar
  • ¼ tsp white pepper
  • 1 egg white
  • ½ tsp sesame oil
  • ½ tsp Chinese rice wine
  • 1 tsp cornstarch
  • 1 tbsp green onions, finely sliced

Toast & Coating

  • 4 slices white bread
  • 6 tbsp sesame seeds

For Frying & Garnish

  • 3 cups canola oil (or use a deep-fat fryer)
  • Additional green onions, thinly sliced (for garnish)
  • Chili sauce (for serving)

Instructions

  1. Prepare the Chicken Paste (Food Processor): Place ground chicken, grated garlic, grated ginger, salt, sugar, and white pepper in a food processor. Pulse for 15 seconds to combine evenly.
  2. Add Wet Ingredients: Add egg white, sesame oil, and Chinese rice wine to the mixture. Whiz for 30 seconds until the mixture is smooth and homogenous.
  3. Bind the Mixture: Add cornstarch and pulse for 15 more seconds to integrate it fully.
  4. Finish with Green Onions: Remove the blade and stir in the finely sliced green onions gently by hand.
  5. Alternate Method – Wooden Spoon: In a bowl, combine the ground chicken, grated garlic, ginger, salt, sugar, and pepper. Beat vigorously with a wooden spoon for 30 seconds. Add egg white, sesame oil, and rice wine and continue beating for 1 minute until the mixture lightens in texture. Stir in cornstarch and green onions for 15 seconds.
  6. Prepare the Bread: Remove crusts from bread slices. Spread the chicken mixture evenly across each slice, smoothing the surfaces for complete coverage.
  7. Cut into Triangles: Slice each bread into 4 diagonal triangles, wiping the knife after each cut to maintain clean edges.
  8. Coat with Sesame Seeds: Pour sesame seeds into a shallow bowl. Press each chicken-coated bread triangle sesame-side down into the seeds to adhere a thick coat.
  9. Heat Oil for Frying: Heat canola oil in a medium saucepan over medium-high heat until it reaches 355ºF (180ºC), or heat your deep-fat fryer to the same temperature.
  10. Fry Sesame Chicken Toasts: In batches, fry the toast pieces sesame seed side down for 3 minutes. Flip and cook for an additional 1 minute on the other side until golden and cooked through.
  11. Drain and Garnish: Remove the toasts and drain them on kitchen paper to remove excess oil. Sprinkle with thinly sliced green onions and serve immediately with chili sauce for dipping.

  • Ensure the oil temperature is maintained at around 355ºF/180ºC for perfect frying without oil absorption.
  • Press seeds firmly into the chicken mixture for an even, crunchy coating.
