Instructions
- Crush Oreos: Place Golden Oreo Thins in a food processor and pulse until crumbled with a texture resembling sand.
- Mix Dough: In a large bowl, combine the Oreo crumbs with softened cream cheese. Stir well until a soft dough forms.
- Color Dough: Divide the dough in half, add green food coloring to one half, and blend thoroughly until the color is evenly distributed.
- Form Balls: Split each colored dough half into 12 small pieces. Roll one yellow and one green piece together to create a marbled ball with your hands.
- Insert Sticks: Place the balls on a parchment-lined cookie sheet. Use a teaspoon to make an indent at the top of each ball, then insert a popsicle stick or rod into the center.
- Freeze: Freeze the Oreo balls for about 20 minutes while preparing the chocolate coating.
- Melt Chocolate: In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring each time until smooth.
- Dip Pops: Using a fork or spoon for support, dip each Oreo ball into the melted chocolate, coating it completely. Let excess chocolate drip off before placing them back on the parchment paper.
- Decorate: Before the chocolate sets, garnish each pop with a rainbow gummy candy and sprinkle with gold sprinkles.
