Outer White Layer & Assembly
- 1 cup (or more) whole milk plain Greek yogurt
- 1/2 cup (or more) coconut flour
- 1/2 cup vanilla protein powder
- 1/4 cup heavy cream
Instructions
- Prepare Crunch Coating: Place 8 Golden Oreos in a large resealable plastic bag and crush them into fine crumbs using a rolling pin. Transfer the crumbs to a shallow dish and stir in 1/2 cup crushed freeze-dried strawberries until combined. Cover with plastic wrap to prevent clumping.
- Make Inner Strawberry Layer Dough: In a medium bowl, mix 1/4 cup coconut flour, 1/4 cup crushed freeze-dried strawberries, 3 tablespoons Greek yogurt, 2 tablespoons nut butter, 2 tablespoons heavy cream, and 2 tablespoons maple syrup until a moist dough forms. Adjust moisture by adding cream or coconut flour as needed. Using a 1-teaspoon measure, form small balls and place them on a parchment-lined baking sheet. Cover with plastic wrap.
- Prepare Outer White Layer Dough: In another medium bowl, combine 1 cup Greek yogurt, 1/2 cup coconut flour, 1/2 cup vanilla protein powder, and 1/4 cup heavy cream. Mix until smooth and pliable, adjusting texture with yogurt or flour if necessary. Using a 1-tablespoon measure, scoop portions onto another parchment-lined baking sheet.
- Assemble Protein Bites: Flatten one portion of the white dough in your palm. Place one inner strawberry dough ball in the center, then wrap and roll to seal completely. Roll each assembled bite in the prepared strawberry crunch coating until fully covered.
- Chill: Place the coated bites on a clean parchment-lined baking sheet, cover with plastic wrap, and refrigerate for at least 3 hours or up to 1 day to allow them to firm up.
