Jelly Layer

  • 2 packets Foster Clark’s Jelly Powder
  • 400ml boiling water
  • 400ml cold water
  • A few drops red food colouring (optional)

Cream Layer

  • ¾ tin (approximately 255g) Sweetened Condensed Milk
  • 2 jars (340g each) Devon Double Cream
  • 12g (0.42oz) Gelatin Powder

Garnish

  • Shredded coconut, for decoration
  • Grated dark chocolate, for decoration
  • Fresh sliced strawberries, for decoration

Instructions

  1. Prepare the jelly: Dissolve both packets of Foster Clark’s jelly powder in 400ml of boiling water. Once fully dissolved, stir in 400ml of cold water. Add a few drops of red food colouring to intensify the color if desired.
  2. Set jelly at an angle: Place dessert glasses tilted inside a muffin tray to hold them steady. Pour the jelly mixture into each glass while tilted to create an angled jelly layer. Refrigerate until the jelly sets completely, usually about 1-2 hours.
  3. Bloom the gelatin: Pour cold water into a small bowl and sprinkle the gelatin powder over it. Let it absorb the water for a few minutes until it blooms.
  4. Dissolve the gelatin: Microwave the bloomed gelatin for a few seconds until fully melted. Allow it to cool slightly but not solidify.
  5. Prepare the creamy mixture: In a blender, combine the sweetened condensed milk, double cream, and the dissolved gelatin. Blend on medium speed for about 4 minutes until the mixture is smooth and slightly thickened.
  6. Assemble cream layer: Pour the creamy mixture gently over the set jelly layer in the tilted glasses.
  7. Chill to set: Refrigerate the assembled cups for about 2 hours or until the cream layer is fully set.
  8. Garnish and serve: Decorate the top of each cup with shredded coconut, grated dark chocolate, and fresh sliced strawberries before serving.

  • Tilting the glasses in a muffin tray helps achieve the signature angled jelly look and keeps the glasses stable while chilling.
