  • 4 tbsp ricotta cheese
  • 100g frozen spinach, defrosted and excess liquid squeezed out
  • 1 tbsp harissa paste
  • 1/2 tsp black pepper
  • Pinch of salt

  • 2 (260g each) salmon fillets
  • Oil, for drizzling

Instructions

  1. Prepare the Filling: Place the frozen spinach in the microwave to defrost. Once thawed, squeeze out any excess liquid from the spinach and transfer it to a bowl. Add ricotta, harissa paste, black pepper, and a pinch of salt. Mix thoroughly to create the stuffing.
  2. Prepare the Salmon: Lay each salmon fillet flesh side up on a cutting board. Gently slice vertically down the center lengthwise, cutting just to the skin to create a pocket for the stuffing.
  3. Stuff the Salmon: Spoon two tablespoons of the prepared filling into the pocket of each salmon fillet, evenly distributing the mixture. Place the stuffed fillets onto tinned foil and drizzle a little oil on top for moisture and flavor.
  4. Air Fry the Salmon: Place the foil with the salmon into the air fryer basket. Cook at 370°F (190°C) for 10 minutes. Cooking times may vary slightly based on your air fryer model, so keep an eye to ensure the salmon cooks through without drying out.
