Ingredients
Scale
Dry Ingredients
- 2 cups plain flour (300g)
- 1/3 cup granulated sugar (75g)
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- A pinch of salt
Wet Ingredients
- 3 eggs
- 1 1/3 cups milk (320ml)
- 1 teaspoon vanilla essence
- 1/2 cup butter, melted and cooled (120g)
Topping Ingredients
- 1/4 cup butter, melted (for the churro topping)
- 1/2 cup sugar (120g)
- 2 tablespoons cinnamon spice
Chocolate Ganache
- 1/2 cup chopped chocolate (90g)
- 2 tablespoons cream
Instructions
- Prepare the Dry and Wet Ingredients: In a large bowl, combine the flour, sugar, cinnamon, baking powder, and salt. In a separate bowl, whisk together the eggs, milk, vanilla essence, and melted cooled butter until well combined.
- Create the Batter: Gradually incorporate the dry ingredients into the wet ingredients, stirring until the mixture is smooth and lump-free, creating a pourable batter.
- Bake the Donuts: Spoon or pipe the batter into a DIY doughnut tin. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until golden. Allow to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Carefully remove the tin foil if used.
- Prepare the Topping: While the donuts cool, melt 1/4 cup of butter in a small bowl. In another bowl, mix together the sugar and cinnamon to create the cinnamon sugar mixture.
- Make the Chocolate Ganache: Melt the chopped chocolate in the microwave or over a bain-marie. Stir in the cream until a shiny, thick ganache forms. Set aside for topping the donuts.
- Assemble the Donuts: Brush each cooled donut with the melted butter, then roll thoroughly in the cinnamon sugar mixture to coat all sides. Dip the top half of each donut into the chocolate ganache, covering generously. Let set briefly before serving.
Notes
- For best results, use fresh cinnamon for the topping to intensify the flavor.
- If you don’t have a doughnut tin, use a mini muffin tin and adjust baking time slightly.
- The chocolate ganache should be smooth and shiny; if it’s too thick, add a little more cream to thin it slightly.
- These donut bites are best enjoyed the same day but can be stored in an airtight container for up to 2 days.
- To make them gluten-free, substitute plain flour with a gluten-free baking blend.
