- Prepare Pesto Mayo: In a small bowl, combine 1/4 cup of mayonnaise with 1/4 cup of pesto. Mix thoroughly to create a creamy, flavorful pesto mayo spread.
- Slice the Bread: Lay the toasted focaccia flat on a cutting board. Using a serrated knife turned sideways, carefully slice horizontally through the center of the loaf, creating a top and bottom piece. Keep the top piece flat and set it aside without flipping it to preserve the delicious crumb topping.
- Assemble the Sandwich: Spread a generous layer of pesto mayo on the bottom half of the bread. Layer on the deli turkey, followed by the thinly sliced tomato, a handful of fresh greens, and a few pieces of thinly sliced red onion. Add dollops of pesto mayo on top of the greens and onions for extra flavor without needing to spread it on the top bread piece.
- Finish and Serve: Gently place the top piece of focaccia back onto the sandwich, pressing lightly to secure all the layers.
