- Prepare the baking sheet: Line a baking sheet with parchment paper or wax paper to prevent the truffles from sticking after coating.
- Crush the Oreos: Place the Oreos in a food processor and pulse until fine crumbs form, ensuring even texture for the truffle base.
- Combine with cream cheese: Add the room temperature cream cheese to the Oreo crumbs and pulse just until the mixture turns into a smooth, cookie dough-like consistency. Be careful not to over-process.
- Form the truffles: Using a small cookie scooper, scoop out equal portions of the dough. Roll each portion between the palms of your hands until smooth and place them on the prepared baking sheet. Repeat until all mixture is used. Freeze the balls for 30-60 minutes to firm up.
- Melt the candy melts: In separate microwave-safe bowls, melt the pink candy melts and white candy melts according to package instructions, typically stirring every 20-30 seconds until smooth.
- Coat the truffles: Using a fork or chocolate dipping fork, dip each chilled truffle ball into the melted pink candy melts, rolling to coat thoroughly. Tap the fork on the side of the bowl to remove excess coating, then place the coated truffle back onto the lined baking sheet.
- Decorate: Before the coating sets, drizzle melted white candy melts over the coated truffles and immediately sprinkle Valentine’s Day sprinkles on top.
