Ingredients
Scale
Rice Krispie Treats
- 4 tbsp butter
- 10 oz bag marshmallows
- 1/2 cup dry strawberry (or other flavor) cake mix
- 5–6 cups rice krispie cereal
Frosting
- 1/4 cup butter
- 1/4 cup shortening
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1–2 tsp water
Decoration
- Gummy candy hearts
Instructions
- Prepare the cupcake pan: Grease a cupcake pan thoroughly to prevent the rice krispie treats from sticking during the cooling process.
- Melt butter: In a large pot over low heat, melt 4 tablespoons of butter, stirring gently to avoid burning.
- Add marshmallows: Add the entire 10 oz bag of marshmallows to the melted butter and stir constantly until completely melted and smooth.
- Incorporate cake mix: Stir in 1/2 cup dry strawberry or other flavor cake mix thoroughly; then remove the pot from heat.
- Add rice krispie cereal: Gradually fold in 5-6 cups of rice krispie cereal until each piece is fully coated with the marshmallow mixture.
- Form cupcakes: Spoon the mixture into the prepared cupcake pan, lightly pressing into each cup without compacting too hard to maintain a soft texture.
- Cool: Allow the treats to cool completely in the pan so they set properly.
- Make frosting: In a mixing bowl, combine 1/4 cup butter and 1/4 cup shortening, beating until smooth and creamy.
- Add powdered sugar: Gradually mix in 2 cups powdered sugar until the mixture becomes smooth and fluffy.
- Add flavor and adjust consistency: Stir in 1 teaspoon vanilla extract and 1-2 teaspoons of water or cream to achieve a spreadable consistency.
- Decorate: Once the cupcakes have cooled, frost each one generously and top with a gummy candy heart for a festive finishing touch.
Notes
- Be careful not to press the rice krispie mixture too hard into the cupcake pan to keep treats soft and chewy.
- For variety, use different flavors of cake mix or gummy candies to customize your cupcakes.
- If frosting is too thick, add a little more water or cream, one teaspoon at a time, to reach desired spreadability.
- These treats are best enjoyed the same day but can be stored in an airtight container for up to 2 days.
